Ageing
In French oak barrels, from the 1900s with the addition of aged balsamic vinegar extracted from centuries old casks.
PRODUCER BACKGROUND
Balsamic vinegar is a condiment whose origins are lost in history, but not in the case of Acetaia Giuseppe Giusti, where it has been a way of life, handed down over four hundred years. Savour Balsamic Vinegar of Modena Quarto Centenario IGP, specially created to celebrate four centuries of vinegar-making, and immerse yourself in exceptional flavours of tobacco, roast coffee and wood. An unmistakable flavour that comes to your table to enrich pastas with meat sauces, mature cheeses, polenta and grilled meat. Giusti: a name, a four hundred-year guarantee.
In 1598 Cesare D'Este, forced by the Pope to leave Ferrara, transferred the capital of his Duchy to the then poor and rural Modena, which would remain the capital of the D'Este duchy until 1859. On their arrival, the Este family created official registers and statutes for all the guilds of crafts and trades, so that they could establish a bureaucratic system and raise taxes.
This is the first official documentation of the existence of the Giusti family business, which had already operated for centuries in the production and sale of typical Modena products: Lambrusco, "fine sausages" and in particular Balsamic Vinegar, which has been the family's pride and joy ever since.
And that's the beginning of the oldest, most prestigious and award-winning producer of Aceto Balsamico in Modena, Italy and the world.
The Giusti family has led the way in the production of exceptional quality Balsamic Vinegar, gaining all kinds of awards and honours over the centuries: authors of the first documented recipe for Balsamic Vinegar (1863), winners of 14 gold medals during its glorious adventures in Belle-Époque Europe, and holders of the privilege of displaying the royal coat of arms, granted in 1929.
