Discover Pici, one of Tuscany’s most characteristic traditional pastas and a true expression of the region’s rustic culinary heritage.

Pici are long, thick, irregular pasta strands traditionally made by hand. They are particularly associated with the Tuscan areas of Val d’Orcia, Siena, Cortona, and Montepulciano, where they are known as pici and, in some areas such as Montalcino, pinci.

The name is linked to the traditional technique known as “appiciare”, the hand method used to roll and stretch the dough into long, rustic strands. This preparation requires little more than simple ingredients, a wooden work surface, and skilled hands.

Pici have ancient roots and are traditionally associated with the simple cuisine of the Tuscan countryside. Historically, the dough was made with just flour and water, making it an everyday pasta for rural families. Versions enriched with egg were considered more special and were traditionally prepared for Sundays and holidays.

Today, Pici remain one of the most beloved examples of Tuscan comfort food. Their substantial, irregular shape and naturally rough texture make them particularly good at holding sauces, from hearty meat ragùs to rich tomato sauces, mushrooms, garlic, extra virgin olive oil, and traditional Tuscan preparations.

Artisanal Tuscan Pasta

Our Pici are made by slowly kneading 100% Tuscan durum wheat semolina with cold water. The dough is then bronze-drawn, giving the pasta its characteristic rough and porous surface and allowing sauces to cling beautifully.

The pasta is finally dried slowly at a low temperature of approximately 60°C (140°F), helping preserve its texture and traditional character.
